Pancakes

I am not much of a breakfast food person. I just don't care for them so I don't normally make them. Scrambled eggs, cereal and toast is about as breakfasty as we get. While I was away my good friend, Paola, offered to help with the girls. They hit the breakfast jackpot while at Paola's house. Elaine's life has forever been changed. The morning that Rob dropped them off pancakes were for breakfast at her house. Elaine loved them so much that was her request for lunch as well. A few days after I got back Paola watched them both for me when I had an appointment. When I picked them up I was warned they might smell a little like maple syrup. That's right, pancakes again! Elaine tells me several times a day "Paola made me pancakes" and started requesting I do the same. I dug out the recipe my mom used to make and attempted to recreate Elaine's dream meal. I tried and failed. After my second attempt of Elaine hardly eating any she tells me "I only like it when Paola makes it for me". She didn't like mine. I should defininatley stick to cereal.

We had ebelskivers at our house this morning. And you know, you could always just try making pancakes with a mix...maybe that will turn out better for you.
